  • 3 medium Bell Pepper, Yellow
  • 3 medium Bell Pepper, Red
  • 8 ounces Cream Cheese
  • 2 cups Cheddar Cheese, Shredded
  • 2 cups Milk
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoons Salt
  • 1/8 teaspoons Cayenne Pepper
  • 6 teaspoons Panko Bread Crumbs

  1. Cook pasta according to package directions until just al dente.
  2. Cut stems off of peppers and deseed.
  3. In a microwave safe bowl, place cream cheese, cheddar cheese and milk.
  4. Cook in microwave for 3-5 minutes, stirring after each minute until melted.
  5. Add in mustard, salt and cayenne.
  6. Mix in macaroni noodles.
  7. Fill peppers with macaroni and cheese and place into indicated number of baking pans.
  8. Top each pepper with panko breadcrumbs and spray with cooking spray.
  9. Bake at 450F for 25-30 minutes.
