Ingredients

  • 1 ⅔ cups peel and mash Banana
  • ½ cups Applesauce
  • ½ cups Milk
  • 1 teaspoon Vanilla Extract
  • 2 individual Egg
  • 2 cups Flour, White Whole Wheat
  • ½ cups Rolled Oats
  • ½ cups Wheat Germ
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • ¾ teaspoons Cinnamon
  • ½ teaspoons Nutmeg
  • ¾ cups Cranberries, Fresh
  • ½ cups chop Pecans
  • 1 teaspoon zest Orange

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Place mashed bananas in a large mixing bowl. Whisk in applesauce, milk, vanilla extract, and eggs.
  2. In a separate bowl, whisk together flour, oats, wheat germ, baking soda, baking powder, cinnamon, and nutmeg.
  3. Add dry ingredients to the banana mixture and stir until just combined.
  4. Gently fold in cranberries, pecans, and orange zest.
  5. Pour into greased 9 x 5 loaf pans.
  6. Bake at 350 degrees for 50 minutes or until a knife or toothpick inserted in the center comes out clean.
  7. Cool 5-10 minutes.
  8. Turn out on a wire rack.
