Magic Muffins - Diet Version

<p>As I've mentioned before, a balance of protein and fiber are essential in breakfast to keep you satisfied and full. These muffins pack a lot of flavor with the orange and the brans make it quite hearty. I like to put a small bit of greek yogurt on mine!</p>

  • 1 1/2 cups Oat Bran
  • 1 cup Bran Cereal
  • 1 cup Whey Protein, Vanilla
  • 1 cup Flaxseed, Ground
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/4 teaspoons Salt
  • 1 medium Orange
  • 1 cup Sugar
  • 1/4 cups Maple Syrup, Sugar Free
  • 1 cup Buttermilk, Low-Fat
  • 1/2 cups Applesauce
  • 4 individual Egg White

  2. Blend the rest of the ingredients in a blender.

  4. Scoop into muffin tins and bake at 375 for 20 minutes.
