Why would I want to freeze this?

  1. In a large bowl, whisk together pecans, almond meal/flour, oats, and salt.
  2. In a sauce pan, heat almond butter and coconut oil until just melted.
  3. Remove from heat and stir in syrup and vanilla.
  4. Add wet ingredients into dry ingredients and stir to combine.
  5. Line an 8 x 8 pan with parchment paper.
  6. Divide into prepared pan and spread evenly.
  7. Cover and freeze for 15-30 minutes.
  8. Remove and cut into equal pieces using a sharp knife.
  9. Individually wrap bars in plastic wrap, label & freeze.
