Griddle

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, sugar, baking powder, cinnamon and salt.
  2. Add the maple syrup, egg, oil, and milk and whisk until a smooth batter forms.
  3. Fold in the chopped pecans.
  4. Preheat an electric griddle to 300 degrees, or warm a skillet over medium-high heat, lightly coat with nonstick cooking spray.
  5. Using a 0.25 cup measuring cup, pour the batter in 4-inch circles onto the hot griddle or skillet.
  6. Flip the pancakes with a spatula once bubbles form on the surface of the batter.
  7. Repeat until all pancakes have been cooked.

  7. I have been a follower of yours both through your blog and your Facebook page for awhile now.I’m interested in taking a look at this book mainly for the lunch ideas. I had started doing the plan-ahead dinners, and while it cut back on our “going-out-to-eat” spending, it didn’t cut back as much as I had anticipated. After looking at it, I realized that the majority of our eating out is because we don’t have anything quick or easy to make for breakfast and lunch. I am not a breakfast eater, so I don’t worry much about that, but not having something easy for lunch is a problem. It causes me to not want to bother trying to think of something to make, and I just go out instead of making something at home. Hopefully a book like this could help me find delicious, easy and affordable menu ideas to start my own weekly “plan-ahead” lunches, too!

  10. The $5 Breakfast & Lunch cookbook is going to help me come up with more creative solutions for breakfast. Right now we rotate between cereal, oatmeal, waffles/pancakes, toast and bagels.
