Why would I want to freeze this?

  1. Pulse cashews in a food processor until the pieces are somewhat uniform in size. Some larger chunks may remain.
  2. Add the remaining ingredients and process until most of the mixture is spinning in the processor in one lump.
  3. Pinch off chunks of the mixture and roll into balls.
  4. Place balls on a parchment lined baking sheet. Flash freeze.
  5. Divide the balls among the indicated number of freezer bags.
  6. Seal, label and freeze.
