  1. In a small bowl, toss artichoke hearts with lemon juice and set aside.
  2. Divide dough into equal sized pieces according to how many pizzas you are making.
  3. On a lightly floured surface, roll each into a 6 inch circle, then press dough into greased muffin cups.
  4. Sprinkle each dough cup with 1 tablespoon each cheese and tomato.
  5. Divide toppings (chicken, artichoke, and olives) evenly among the cups and then sprinkle another tablespoon each cheese and tomato.
  6. Bake at 450 degrees until dough is golden brown and crisp, about 12 minutes.
