  1. In a small bowl, toss artichoke hearts with lemon juice and set aside.
  2. Divide dough into equal sized pieces according to how many pizzas you are making.
  3. On a lightly floured surface, roll each into a 6 inch circle, then press dough into greased muffin cups.
  4. Sprinkle each dough cup with 1 tablespoon each cheese and tomato.
