These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. In a large bowl mix flours, baking powder, baking soda, and brown sugar.
  2. Make a well in the center and add the buttermilk, egg, olive oil and bananas.
  3. Quickly fold the ingredients together, just until combined. Do not over mix.
  4. Gently fold in blueberries with one or two stirs.
  5. Divide batter among greased muffin tins, each will be very full. Sprinkle tops with white sugar.
  6. Bake at 350 for 20-25 minutes until muffins are risen and golden brown. Test doneness by inserting a toothpick into the center.
