- 12 tablespoons Lard/Shortening, Palm

- 1 tablespoon Vanilla Extract
- 2 tablespoons Coconut Flour
- 2 cups Almond Flour
- 1/2 teaspoons Baking Soda
- 1 teaspoon Salt
- 1/2 cups Raisins
- 1/2 cups Almonds, Sliced
- 1/2 cups chop Pecans
- 1/2 cups pit and chop Dates #2

Why would I want to freeze this?
- Grease cookie sheet with coconut oil.
- Combine cashews and dates #1 in food processor.
- Process for 2 minutes until ground and blended.
- Add palm shortening, eggs and vanilla and process until blended.
- Add in coconut flour, almond flour, baking soda and salt and pulse to combined.
- Place mixture in a bowl, and add in raisins, almonds, pecans and diced dates #2.
- Roll into tablespoon sized balls and place on greased cookie sheet.
- Flatten with hands and bake at 350 degrees for 8-10 minutes, or until cookies are brown.
- Allow to cool.
- Divide among indicated number of freezer bags. Label and freeze.
