Freeze For Later Cooking Directions

Why would I want to freeze this?

  1. **Due to the nature of pressure cooking there is always room for inconsistency. The times given here are based on 7 servings fresh. If you are using more servings you may need to increase your cooking time.**
  2. In a bowl, combine the eggs, yogurt, syrup, butter and vanilla.
  3. Add the dry ingredients and stir until just combined. Fold in the blueberries.
  4. Use a 1/4 cup measuring cup to divide the mixture among the indicated number of well-greased silicone baking cups.
  5. Pour 1 cup of water into the bottom of the Instant Pot and place a trivet in the bottom.
  6. Place one of the molds on the trivet and then create 4 1/2 inch thick foil rings to lift the second mold off the first. (Or small mason jar rings if you have them available.)
  7. Place the second mold into the Instant Pot. Lock the lid in place and seal the steam nozzle.
  8. Cook on high pressure for 10 minutes.
  9. Release the pressure naturally for 10 minutes, then release any remaining pressure.
  10. Let cool.
  11. Use a butter knife to scrape around the edges of each oatmeal bite. Turn out onto a plate or cooling rack.
  12. Divide among the indicated number of freezer bags. Label and freeze.
