Make It Now Cooking Directions
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Heat a large skillet over medium heat.
- Add chicken, onions, and pepper to skillet and season with salt and pepper.
- Add tomatoes and chiles, tomato sauce, and taco seasoning. Cook 7-9 minutes until vegetables are tender and sauce is thickened.
- Remove from heat and stir in lime juice.
- Set your oven rack about 6 inches from the top element.
- Divide mixture and top each piece of bread evenly. Sprinkle 1/4 cup of cheese over the top of each sandwich.
- Place on a baking sheet and broil under the broiler 2-3 minutes until cheese is melted and slightly browned. Watch carefully as each oven temperature differs slightly.
- Top with sour cream and chopped cilantro and serve.
