Open Face Chicken Fajita Sandwich - Dump and Go Dinner

<p>These open-face sandwiches are a fun update to regular fajitas and they can be on the table in just 30 minutes.</p>

Ingredients

  • 6 cups cook and shred Chicken, Boneless Breasts
  • 1/2 cups dice Onion
  • 1/2 cups dice Bell Pepper, Red
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 8 ounces Diced Tomatoes with Green Chiles
  • 1/2 cups Tomato Sauce
  • 2 tablespoons Taco Seasoning
  • 6 individual slice French Bread
  • 1 1/2 cups Mexican Cheese, Shredded

Serving Day Ingredients

  • 2 tablespoons juice Lime
  • 6 tablespoons Sour Cream
  • 1 1/2 teaspoons chop Cilantro, Fresh

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Heat a large skillet over medium heat.
  2. Add chicken, onions, and pepper to skillet and season with salt and pepper.
  3. Add tomatoes and chiles, tomato sauce, and taco seasoning. Cook 7-9 minutes until vegetables are tender and sauce is thickened.
  4. Remove from heat and stir in lime juice.
  5. Set your oven rack about 6 inches from the top element.
  6. Divide mixture and top each piece of bread evenly. Sprinkle 1/4 cup of cheese over the top of each sandwich.
  7. Place on a baking sheet and broil under the broiler 2-3 minutes until cheese is melted and slightly browned. Watch carefully as each oven temperature differs slightly.
  8. Top with sour cream and chopped cilantro and serve.

  1. In a large bowl combine chicken, onion, bell pepper, salt, pepper, tomatoes and chiles, tomato sauce, and taco seasoning.
  2. Divide among 1/2 of indicated number of gallon freezer bags.
  3. Divide bread slices among remaining 1/2 of indicated number of gallon freezer bags. Divide cheese among quart freezer bags and place inside bag with bread.
  4. Label and lay bags flat to freeze.

These directions help you cook or reheat this meal AFTER it's been frozen for when you are ready to eat it.

  1. Thaw: In fridge
