Ingredients

  • 1 tablespoon Coconut Oil
  • 1 1/2 cups grate Zucchini
  • 1/2 cups grate Carrot
  • 2/3 cups dice Onion
  • 4 teaspoons mince Garlic, Cloves
  • 3/4 cups Almond Flour
  • 1/4 cups chop Parsley, Fresh
  • 2 teaspoons Sea Salt
  • 2 individual beat Egg
  • 1 1/2 pounds Ground Beef
  • 1/2 pounds Ground Pork
  • 4 individual Bacon

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. In skillet over medium, heat coconut oil.
  2. Saute zucchini, carrot, onion and garlic.
  3. Set aside to cool.
  4. In a large bowl combine almond flour, parsley, sea salt, eggs, ground beef and ground pork.
  5. Add in cooled sauteed vegetable mixture to the meat mixture, mixing until evenly combined.
  6. Press meat mixture firmly into a 9x5 foil loaf pan. Top with bacon slices, tucking the ends in if they are too long.
  7. Bake at 350 for 45 minutes.
  8. Remove from oven and carefully pour off bacon/meat grease.
  9. Return to oven and bake an additional 10 minutes.

Why would I want to freeze this?

  1. In skillet over medium, heat coconut oil.
  2. Saute zucchini, carrot, onion and garlic.
  3. Set aside to cool.
  4. In a large bowl combine almond flour, parsley, sea salt, eggs, ground beef and ground pork.
  5. Add in cooled sauted vegetable mixture to the meat mixture, mixing until evenly combined.
  6. Divide meat mixture between indicated number of loaf pans, firmly pressing meat into pan. Divide bacon slices equally over the top of the meat loaf, tucking the ends in if they are too long.
  7. Cover tightly with foil, label and freeze.

These directions help you cook or reheat this meal AFTER it's been frozen for when you are ready to eat it.

  1. Thaw: In fridge
  2. Bake at 350 for 45 minutes.
  3. Remove from oven and carefully pour off bacon/meat grease.
  4. Return to oven and bake an additional 10 minutes.
