Why would I want to freeze this?

  1. Cook sweet potatoes in cooking oil of your preference until softened.
  2. Combine sweet potatoes, sausage, and peppers. Divide among indicated number of baking dishes.
  3. In a bowl, whisk together the remaining ingredients. Pour over sausage mixture.
  4. Bake at 350 degrees for 45 minutes.
  5. Let cool.
