  • 1/4 cups Almond Flour
  • 2 individual Egg
  • 1 tablespoon mince Chipotle Pepper in Adobo #1
  • 1 teaspoon Oregano #1

  • 1/8 teaspoons Salt #1
  • 1 cup Chicken Broth/Stock
  • 15 ounces Tomato Sauce
  • 1/2 tablespoons mince Chipotle Pepper in Adobo #2
  • 2 teaspoons Oregano #2
  • 2 teaspoons Onion Powder #2
  • 1 teaspoon Garlic Powder #2
  • 1/8 teaspoons Salt #2

  • 1 cup peel, pit, and mash Avocado
  • 1/4 cups juice Lemon
  • 1/4 teaspoons Chili Powder
  • 3/4 teaspoons Garlic Salt

Why would I want to freeze this?

  1. Combine ground beef, almond flour, eggs, chipotle peppers #1, oregano #1, onion powder #1, garlic powder #1 and salt #1 in a large bowl.
  2. Mix well using hands.
  3. Form into golf ball-sized meatballs.
  4. Place on a parchment lined baking sheet and flash freeze meatballs.
  5. Combine chicken stock, tomato sauce, chipotle peppers #2, oregano #2, onion powder #2, garlic powder #2 and salt #2 and divide among 1/2 indicated number of gallon freezer bags.
  6. Once frozen, divide meatballs among remaining 1/2 of gallon size freezer bags.
  7. Tape both bags together and affix label.

Make From Frozen Serving Day Directions

These directions help you cook or reheat this meal AFTER it's been frozen for when you are ready to eat it.

  1. Thaw: In fridge
  2. Bake meatballs in a baking dish at 400 for 15 minutes.
  3. Heat sauce on stovetop over low heat, simmering until meatballs are done baking.
  4. Place avocados, juiced lemon, garlic salt, and chili powder in a bowl.
  5. Smash with a fork until desired consistency is reached.
  6. Spoon sauce on top of meatballs, then top with a dollop of the avocado mixture.
