Why would I want to freeze this?

  1. Combine dry ingredients and zest in a bowl.
  2. Combine wet ingredients in a separate bowl.
  3. Stir the wet ingredients into the dry ingredients. Fold in cranberries.
  4. Fill lined muffin tins 3/4 full.
  5. Bake at 325 degrees for 20 - 25 minutes, until golden brown.
  6. Let cool.
  7. Divide among indicated number of bags. Seal, label and freeze.
