  • 1/2 cups Almonds, Slivered
  • 1/2 cups chop Pecans
  • 1/4 cups Coconut, Shredded #1
  • 1/4 cups Coconut Oil
  • 1/4 cups Almond Butter
  • 1 1/2 teaspoons Vanilla Extract
  • 1/2 teaspoons Honey, Raw
  • 1/2 teaspoons Sea Salt
  • 1/4 cups Almond Flour
  • 1/2 cups Whey Protein
  • 1 individual Egg
  • 1/2 cups Cranberries, Dried
  • 1/4 cups Coconut, Shredded #2

Freeze For Later Cooking Directions

Why would I want to freeze this?

  1. On a baking sheet, toast nuts and shredded coconut #1 at 325 degrees until golden brown.
  2. Once toasted, pour mixture into a food processor and pulse until nuts are chopped and the mixture becomes coarsely ground (sort of the consistency of bread crumbs).
  3. In a mixing bowl, melt coconut oil and almond butter in the microwave for about 30 seconds. Remove from microwave and stir until smooth.
  4. Add vanilla extract, honey and sea salt. Mix thoroughly.
  5. Fold in nut mixture, almond flour and protein powder until mixed thoroughly.
  6. Add egg and mix thoroughly.
  7. Fold in cranberries.
  8. Press into one parchment lined 9x13 pan per 12 servings.
  9. Cook in oven at 325 degrees for 10 minutes.
  10. Remove from oven, sprinkle shredded coconut #2 on top and place under broiler until top begins to brown.
  11. Let cool for 10-15 minutes.
  12. Cut into bars, then wrap individually in plastic wrap.
  13. Divide wrapped bars among indicated number of gallon bags, label & freeze.
