- In a bowl, combine coconut, cinnamon, coconut flour, salt, and baking powder.
- Stir in pumpkin puree, maple syrup, and coconut oil.
- Place on a parchment lined baking sheet and bake at 350F for 18 minutes. Cookies will not brown.
