Why would I want to freeze this?
- Using a spiralizer, peel zucchini into ribbon noodles.
- In a skillet over medium heat, cook bacon until crispy.
- Remove bacon from pan, and discard half of the rendered bacon grease.
- To the remaining grease in the pan, add zucchini noodles.
- Cook until zucchini is just tender enough to swirl around a fork without breaking.
- Add bacon back to pan, along with coconut milk, garlic powder, basil, oregano, thyme and salt and pepper.
- Cook for 3-4 minutes.
- Allow to cool.
- Divide among indicated number of freezer bags. Label and freeze.
