  • 4 medium Zucchini
  • 1/2 cups dice Bacon
  • 1/2 cups Coconut Milk, Canned
  • 1 1/2 teaspoons Garlic Powder
  • 1 teaspoon Basil, Dried
  • 3/4 teaspoons Oregano, Dried
  • 1/2 teaspoons Thyme, Dried
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper

Why would I want to freeze this?

  1. Using a spiralizer, peel zucchini into ribbon noodles.
  2. In a skillet over medium heat, cook bacon until crispy.
  3. Remove bacon from pan, and discard half of the rendered bacon grease.
  4. To the remaining grease in the pan, add zucchini noodles.
  5. Cook until zucchini is just tender enough to swirl around a fork without breaking.
  6. Add bacon back to pan, along with coconut milk, garlic powder, basil, oregano, thyme and salt and pepper.
  7. Cook for 3-4 minutes.
  8. Allow to cool.
  9. Divide among indicated number of freezer bags. Label and freeze.
