- In a large pot, heat olive oil over medium high heat.
- Cook onion, celery, garlic and pepper until tender.
- Add beef broth, diced tomatoes, tomato paste, and Italian seasoning.
- Cover, reduce heat and simmer for 1 hour.
- Add in beef and simmer for an additional 15 minutes.
- Stir in the ditalini pasta and cook until almost al dente, approximately 8 minutes.
- Stir in the beans and continue to simmer for an additional 10 minutes.

Forget about toddlers being picky! I have grown kids and a hubby that are picky! This sounds so good! I will be making this this week!
If I omit the beans should I add something else? Also, if I use rotini noodles should I add more than one cup? (egg allergy so our noodle options are very limited). Thanks!!
Ellie – if you omit the beans you wouldn’t have to substitute with anything additional. I have 2 kiddos that prefer without beans so I often times make it that way. If using rotini I would use the same amount of pasta. Enjoy!
Can I adapt this recipe for my slow cooker?
Yes Kaley – you certainly can. Add all ingredients but pasta to slow cooker and cook low 4-5 hours. Add the pasta and cook for an additional hour.
