<p>Ditalini pasta and ground beef pair to turn your normal Pasta Fagioli into a toddler approved, family friendly and very hearty soup.</p>

Ingredients

  • 1/4 cups Olive Oil
  • 2 cups dice Onion
  • 1 cup dice Celery
  • 2 teaspoons mince Garlic, Cloves
  • 1 teaspoon Black Pepper
  • 56 fluid ounces Beef Bone Broth/Stock
  • 14 ounces Diced Tomatoes, Canned
  • 6 ounces Tomato Paste
  • 2 teaspoons Italian Seasoning
  • 2 1/4 cups cook Ground Beef
  • 1 cup Ditalini
  • 15 ounces drain and rinse Kidney (Dark Red) Beans, Canned

  1. In a large pot, heat olive oil over medium high heat.
  2. Cook onion, celery, garlic and pepper until tender.
  3. Add beef broth, diced tomatoes, tomato paste, and Italian seasoning.
  4. Cover, reduce heat and simmer for 1 hour.
  5. Add in beef and simmer for an additional 15 minutes.
  6. Stir in the ditalini pasta and cook until almost al dente, approximately 8 minutes.
  7. Stir in the beans and continue to simmer for an additional 10 minutes.

  8. Allow to cool completely.
  9. Divide among indicated pint freezer storage bags. Label and freeze.
