- Brown ground lamb meat in an ovenproof skillet over medium heat.
- Mix together browned lamb, roasted red peppers and leeks.
- Cook for 5 minutes until leeks are translucent.
- Add eggs, salt and pepper to skillet.
- Bake in 425F degree oven for 10-12 minutes, or until eggs are cooked.
