  2. Mix together browned lamb, roasted red peppers and leeks.
  3. Cook for 5 minutes until leeks are translucent.
  4. Add eggs, salt and pepper to skillet.
  5. Bake in 425F degree oven for 10-12 minutes, or until eggs are cooked.
