Why would I want to freeze this?
- Heat frying pan over medium-high heat and add coconut oil.
- Add bananas, eggs, almond butter and cinnamon to a blender and mix until thoroughly combined.
- Reduce heat to medium then pour batter into pan making 3-4 inch pancakes.
- Cook 2-3 minutes per side and then flip to cook another 2-3 minutes.
- Let cool.
- Alternate pancakes and squares of parchment/wax paper.
- Divide among indicated number of freezer bags, label and freeze.
