I finally made these last week and they are so yummy! We grilled a flank steak instead of using deli roast beef and sliced it really thin using the food processor. My husband has been begging for sandwiches ever since we went grain-free in our house and this definitely made him happy! You have inspired me to try some of of the other recipes we miss using peppers instead of bread. I tried pizza peppers this week using ground beef, pepperoni, mushrooms, onions, and pizza sauce with mozzarella cheese on top. Not sure why I never thought of it before, so thanks!
