Why would I want to freeze this?
- Place the pineapple and water in a microwave safe bowl and heat for 20 seconds.
- Allow the pineapple to cool a bit.
- Meanwhile, combine the coconut, macadamia nuts, chia seeds, whey protein, vanilla and honey.
- Process the softened pineapple in a food processor until a paste is formed.
- Add the pineapple paste to the coconut mixture and mix well.
- Form into 12 balls per every 4 servings.
- Flash freeze.
- Divide among the indicated number of gallon freezer bags. Label and freeze.
