  • 4 medium Bell Pepper, Red
  • 2 tablespoons Olive Oil
  • 2/3 cups dice Onion, Red
  • 1 teaspoon mince Garlic, Cloves
  • 1/4 cups dice Mushrooms
  • 1 3/4 cups cook Ground Italian Sausage
  • 1/4 cups drain Black Olives, Sliced, Canned
  • 1/2 cups Tomato Sauce
  • 1/4 cups Tomato Paste
  • 1 teaspoon Red Pepper Flakes
  • 1/2 teaspoons Thyme, Dried
  • 1/2 teaspoons Oregano, Dried
  • 1/2 teaspoons Rosemary, Dried
  • 1/4 teaspoons Salt
  • 1/4 teaspoons Black Pepper

  1. Slice tops off of bell peppers and remove seeds.
  2. Dice tops of peppers to be used in filling.
  3. In a large skillet over medium heat, add olive oil.
  4. Add onions and cook until translucent.
  5. Add garlic and cook for 1 minute.
  6. Add diced bell pepper tops and mushrooms and cook until softened.
  7. Add browned sausage, olives, tomato sauce, tomato paste, and seasonings. Stir until combined.
  8. Place peppers into indicated number of baking pans.
  9. Scoop filling into peppers.
  10. Bake at 400F degrees for 45 minutes, or until peppers are tender.
