- Slice tops off of bell peppers and remove seeds.
- Dice tops of peppers to be used in filling.
- In a large skillet over medium heat, add olive oil.
- Add onions and cook until translucent.
- Add garlic and cook for 1 minute.
- Add diced bell pepper tops and mushrooms and cook until softened.
- Add browned sausage, olives, tomato sauce, tomato paste, and seasonings. Stir until combined.
- Place peppers into indicated number of baking pans.
- Scoop filling into peppers.
- Bake at 400F degrees for 45 minutes, or until peppers are tender.
