Ingredients

  • 1 1/2 pounds Pork Chops, Boneless
  • 1/4 teaspoons Red Pepper Flakes
  • 1/4 teaspoons Ginger, Ground
  • 2 tablespoons Soy Sauce, Low Sodium
  • 1 tablespoon Vegetable Oil
  • 1 1/4 cups dice Onion
  • 1 teaspoon mince Garlic, Cloves
  • 1 1/2 cups Chicken Broth/Stock, Reduced Fat
  • 16 ounces Stir Fry Vegetables, Frozen
  • 2 tablespoons Cornstarch
  • 1/4 cups Water

  1. Place cubed pork in a bowl. Sprinkle with red pepper flakes, ginger, and soy sauce. Toss to coat.
  2. Let marinate at least 30 minutes in the refrigerator.
  3. Heat oil in a large skillet over medium heat.
  4. Add pork and brown meat, about 10 minutes.
  5. Add onion and saute until soft, about 5 minutes.
  6. Add in garlic, cooking for about a minute. Then, stir in chicken broth.
  7. Simmer for 30 minutes.
  8. Add in frozen vegetables and cook for another few minutes.
  9. Mix cornstarch and water in a small bowl.
  10. Bring stir fry to a boil.
  11. Add in cornstarch mixture to thicken, boiling for an additional minute.
