This has by far become my favorite tofu recipe. The tofu soaks up the sweet honey mustard marinade and provides a perfect contrast to the salty pretzel crust.

Stove Cook
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- Combine honey, mustard, soy sauce, olive oil #1, and lemon juice in a small bowl.
- Place tofu in a shallow dish and pour marinade over tofu, so that it is completely covered.
- Allow to marinate for at least 1 hour.
- Meanwhile, crush pretzels and place in another shallow dish.
- Place eggs in a third shallow dish.
- When tofu is done marinating, dip each piece in egg.
- Followed by dipping in the crushed pretzels.
- Heat olive oil #2 in a medium saute pan.
- Cook each tofu piece until it begins to brown.
- Drizzle with remaining marinade, if desired.
