Why would I want to freeze this?

  1. In a bowl, mix together coconut flour, pumpkin pie spice and baking powder.
  2. Microwave honey 30-60 seconds until melted.
  3. In a separate bowl combine pumpkin puree, coconut oil, eggs, vanilla, and melted honey.
  4. Add dry ingredients to wet ingredients and mix well.
  5. Divide batter into greased muffin cups.
  6. Sprinkle with chopped walnuts.
  7. Bake at 400F for 18-20 minutes until done.
  8. Allow to cool.
  9. Divide among indicated number of freezer bags. Label and freeze.
