  • ⅔ cups Flour, All-Purpose
  • ½ teaspoons Salt
  • ½ teaspoons Garlic Salt
  • ¼ teaspoons Onion Powder
  • ¼ teaspoons Black Pepper
  • ⅛ teaspoons Chipotle Chili Powder
  • 1 cup Buttermilk
  • 3 cups rinse, drain, and cook Quinoa
  • 7 cups chunk Chicken, Boneless Breasts

Make It Now Cooking Directions

Oven Cook

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Grease a cooling rack and place on top of a baking sheet. Set aside.
  2. In a medium mixing bowl, blend flour, salt, garlic salt, onion powder, black pepper, and chipotle powder.
  3. Pour buttermilk into a separate small bowl.
  4. Place quinoa in a medium bowl or onto a plate.
  5. One at a time, dredge chicken pieces in flour, then buttermilk, then quinoa, pressing quinoa to help it stick.
  6. As nuggets are finished, arrange them gently on the prepared cooling rack.
  7. Spray top side of nuggets generously with cooking spray, which helps the quinoa to get crispy.
  8. Bake at 425 degrees for 10 minutes.
  9. Remove and carefully turn over each chicken nugget.
  10. Spray the new top side with cooking spray again.
  11. Bake for an additional 8-10 minutes or until cooked through and crispy.
  12. Serve plain or with your favorite dipping sauce.
