  • 2 tablespoons Olive Oil
  • 3 cups dice Tomato
  • 3 cups dice Zucchini
  • 1/2 cups dice Onion, Red
  • 2 teaspoons mince Garlic, Cloves
  • 1 teaspoon Basil, Dried #1
  • 2 teaspoons Oregano, Dried
  • 1 cup Parmesan Cheese, Shredded
  • 1 tablespoon chop Basil, Fresh #2
  • 1 teaspoon Salt
  • 1/2 teaspoons Black Pepper
  • 1 cup Panko Bread Crumbs
  • 1 individual beat Egg
  • 6 cups cook Medium Shells
  • 3 cups Pasta Sauce

Freeze For Later Cooking Directions

Why would I want to freeze this?

  1. In a skillet, heat olive oil over medium heat until hot.
  2. Add tomatoes, zucchini, onions, garlic, basil #1 and oregano and saute for 10-15 minutes.
  3. Remove from heat and cool for 10 minutes.
  4. After cooled, mix with Parmesan cheese, basil #2, salt, pepper, panko bread crumbs and egg.
  5. Using a scoop or Tablespoon, form 1 inch balls and place on a parchment lined baking sheet.
  6. Bake at 375 for 25 minutes or until golden brown.
  7. Let cool.
  8. Divide the meatballs and sauce among half the indicated number of freezer bags.
  9. Divide the pasta among the remaining freezer bags.
  10. Label all bags and freeze together.
