Roasted Garlic Stuffed Chicken

  • 1 whole Garlic, Head
  • 2 teaspoons Olive Oil #1
  • 2 cups drain Artichoke Hearts, Canned
  • 1 teaspoon Sea Salt
  • 1 cup chop Parsley, Fresh
  • 1/4 cups Olive Oil #2
  • 2 pounds Chicken, Boneless Breasts
  • 1 cup Spinach, Baby

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Remove excess skin from head of garlic and slice off top to expose some of the cloves.
  2. Place in an oven safe ramekin and drizzle with olive oil #1.
  3. Roast at 400F for 30-35 minutes.
  4. Allow to cool.
  5. Add the cloves from the roasted head of garlic, artichoke hearts , salt and parsley into a food processor.
  6. Pulse to chop, then stream in olive oil #2.
  7. Butterfly the chicken breasts.
  8. Place artichoke mixture into chicken breast, and top with a handful of spinach.
  9. Fold chicken back up.
  10. Remove toothpicks from chicken and grill over medium-high heat for 5-7 minutes on each side, or until desired doneness.
