Santa Fe Breakfast Quesadillas

Ingredients

  • 4 individual Egg
  • 1 1/2 cups Cheddar Cheese, Shredded
  • 1 cup dice Bell Pepper, Red
  • 3/4 cups Corn, Frozen
  • 1 cup dice Onion
  • 1 teaspoon Cumin
  • 1/2 teaspoons Garlic Powder
  • 6 ounces drain Mild Green Chiles, Diced, Canned
  • 4 individual Flour Tortillas (10-inch/Large)

  1. Spray skillet with nonstick cooking spray and heat over medium heat on stovetop.
  2. In a medium bowl, mix together eggs, cheese, bell pepper, corn, onion, cumin, garlic powder, and green chiles.
  3. Pour egg mixture into skillet and scramble the eggs.
  4. Once eggs are cooked, divide into tortillas and fold tortillas in half.
  5. Spray another skillet with nonstick cooking spray and cook quesadillas on each side for 4 minutes.
  6. Remove from heat and allow to cool.
  7. Cut tortillas in half if desired to make triangles.
