Sausage and Summer Vegetable Packets

Ingredients

4 servings
  • 24 ounces slice Smoked Sausage
  • 6 cups slice Zucchini
  • 6 cups slice Squash, Yellow
  • 1 ¼ cups slice Onion
  • 2 cups slice Carrot
  • ¼ cups Olive Oil
  • 1 teaspoon Lemon Pepper
  • ⅓ teaspoons Salt

Freezer Containers

  • 1 Gallon Freezer Bag

Supplies

  • Foils
  • Cooking Sprays

Directions

In a large bowl, combine sausage, zucchini, squash, onion, carrots, olive oil, lemon pepper, and salt. Cut 12 inch foil sheets for indicated number of servings. Spray with nonstick cooking spray. Divide mixture into foil sheets and wrap up tightly. Place packets on baking sheet and bake at 375 for 25-30 minutes.

Freezing Directions

In a large bowl, combine sausage, zucchini, squash, onion, carrots, olive oil, lemon pepper, and salt. Cut 12 inch foil sheets for indicated number of servings. Spray with nonstick cooking spray. Divide mixture into foil sheets and wrap up tightly. Place foil packets into indicated number of freezer bags. Label and freeze.

Serving Day Directions

Place packets on baking sheet and bake at 375 for 25-30 minutes.
