Why would I want to freeze this?

  1. Sprinkle the Mahi Mahi with salt #1 and black pepper #1. Divide among half of the indicated number of gallon freezer bags.
  2. Divide the lemon juice among the bags of mahi mahi.
  3. In a skillet, heat avocado oil over medium heat.
  4. Saute the onions for 3-4 minutes.
  5. Add the tomatoes, zucchini, garlic powder, Italian seasoning, salt #2 and black pepper #2.
  6. Cook for 3-4 minutes.
  7. Allow to cool.
  8. Divide the vegetable mixture among the remaining gallon bags.
  9. Label bags and freezer together.
