  1. Grease muffin tin with coconut oil.
  2. Line each muffin tin with a slice of bacon.
  3. In a large bowl whisk together eggs, salt and pepper.
  4. Divide egg mixture even between muffin tins. (This will fill each muffin approximately 1/2 full of egg.)
  5. Sprinkle chives over the top.
  6. Bake at 350 degrees for 30-35 minutes until eggs are set.
