These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. In a lidded sauce pan, melt butter over medium heat.
  2. Add onion, garlic, and shredded carrots and cook 2-3 minutes until they are fragrant.
  3. Add chicken broth and increase heat. Bring to a boil.
  4. Stir in rice. Lower heat to medium low, cover and simmer 40-45 minutes until rice is tender. Stir once half way through cooking time.
  5. Season with salt and pepper to taste.

  1. I am new to eating whole foods and clean eating. I noticed that you use the microwave to reheat this. As I’ve looked more at eating better, warnings about using a microwave seem to keep popping up. What are your thoughts about using microwaves? Do you think it is a danger to health? The more I read, the longer the list seems to grow of changes we need to make to achieve healthy living.

    1. Hi Kristina! We recommend the microwave as it is the the appliance that most people have access to and use to reheat their food. If you choose to not use it for personal reasons, we absolutely support that. Anytime there are microwave directions, you could use the stove or the oven to reheat instead. If you ever wonder what method would work best, feel free to ask! 🙂

      1. I’ve also seen where people use their Instant Pot steam function for 5 minutes to reheat an item. You’d need to add water and do a pot in pot option probably.

  2. I have this simmering on my stove as I type. I haven’t tasted it yet, but it smells amazing! I’ve never made rice pilaf before. I had no idea it could be this simple.

  3. Awful recipe. My boyfriend and I followed the directions as written and the rice didn’t cook at all. Really disappointed, will not be using recipes from here again.
