<p>This Simple Rice Pilaf is the perfect side dish to pull out anytime, but it is particularly helpful during the cold and flu season as it contains homemade broth.</p>

  • 1 tablespoon Butter
  • 1/2 cups dice Onion
  • 2 teaspoons mince Garlic, Cloves
  • 1/3 cups grate Carrot
  • 2 1/2 cups Chicken Broth/Stock
  • 1 cup Brown Rice, Long-Grain
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper

  1. In a lidded sauce pan, melt butter over medium heat.
  2. Add onion, garlic, and shredded carrots and cook 2-3 minutes until they are fragrant.
  3. Add chicken broth and increase heat. Bring to a boil.
  4. Stir in rice. Lower heat to medium low, cover and simmer 40-45 minutes until rice is tender. Stir once half way through cooking time.
  5. Season with salt and pepper to taste.
