Why would I want to freeze this?

  1. Bring water to boil in a large saucepan.
  2. Add vegetables and seasonings, then cover, and return to a boil.
  3. Cook for 2-3 minutes.
  4. Transfer the veggies to a large bowl of ice water.
  5. Drain and pat dry.
  6. Place in a single layer on a baking sheet and flash freeze.
  7. Once frozen solid, divide among indicated number of bags, label & freeze.
