  • 1 pound Ground Turkey
  • 1/2 cups Bread Crumbs, Italian
  • 1/4 cups mince Onion
  • 1 individual Egg
  • 1/2 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 1/2 cups Chicken Broth/Stock, Reduced Fat
  • 3/4 cups dice Bell Pepper, Red
  • 20 ounces drain Chunks Pineapple, Canned
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Brown Sugar
  • 1/4 cups Vinegar
  • 2 tablespoons Cornstarch
  • 4 cups cook White Rice, Long-Grain

Freeze For Later Cooking Directions

These directions help you cook or prepare this meal PRIOR to being frozen for serving later (see Serving Day Directions when you are ready to prepare it to eat).

Why would I want to freeze this?

  1. Combine turkey, breadcrumbs, onion, egg, salt, and pepper and mix well.
  2. Use a tablespoon and scoop into meatballs.
  3. Cook on stovetop over medium-high heat for 3-4 minutes on each side, until cooked through.
  4. Remove the meatballs to a plate and heat chicken stock, red pepper, pineapple, soy sauce, brown sugar and vinegar in a skillet over medium heat until bubbly.
  5. Combine cornstarch with equal parts of cold water until well-combined.
  6. Stir into mixture and cook for 1-2 minutes until it has thickened.
  7. Add fully-cooked meatballs and cook another 3-5 minutes.
  8. Let cool.
  9. Divide rice among half of the bags.
  10. Divide meatballs among remaining bags. Seal, label and freeze.
