Why would I want to freeze this?
- Pat the pork roast dry with paper towels.
- Trim any large areas of fat off of the roast.
- Using a sharp knife, poke holes over the entire roast.
- Cut garlic into chunks and tuck pieces of garlic into the holes in the pork.
- Sprinkle the roast with liquid smoke.
- Rub sea salt into the meat.
- Wrap the bacon strips around the pork, using kitchen twine to tie if needed.
- Carefully divide roast among indicated number of gallon freezer bags, label & freeze.

- Thaw: In fridge
- Cook on low in a slow cooker for 12 hours.
- If desired, place under the broiler for 2-3 minutes, to crisp the bacon.
- Shred pork and mix in crumbled bacon. Serve.
