Why would I want to freeze this?

  1. Pat the pork roast dry with paper towels.
  2. Trim any large areas of fat off of the roast.
  3. Using a sharp knife, poke holes over the entire roast.
  4. Cut garlic into chunks and tuck pieces of garlic into the holes in the pork.
  5. Sprinkle the roast with liquid smoke.
  6. Rub sea salt into the meat.
  7. Wrap the bacon strips around the pork, using kitchen twine to tie if needed.
  8. Carefully divide roast among indicated number of gallon freezer bags, label & freeze.

  1. Thaw: In fridge
  2. Cook on low in a slow cooker for 12 hours.
  3. If desired, place under the broiler for 2-3 minutes, to crisp the bacon.
  4. Shred pork and mix in crumbled bacon. Serve.
