I got some inspiration from the Once A Month Mom & DOLE Frozen Fruit Menu contest entries. This recipe was an inspiration of looking at several different recipes to come up with one that worked for us. You could also substitute chicken if you aren't a fan of pork.
Ingredients
- 2 tablespoons Brown Sugar
- 1 teaspoon Italian Seasoning
- ½ teaspoons Kosher Salt
- ½ teaspoons Black Pepper
- 3 tablespoons Cornstarch
- 2 tablespoons Soy Sauce
- ½ cups Apple Juice
- 1 ½ pounds Pork Tenderloin
- 3 ⅓ cups Mango, Frozen

Make It Now Cooking Directions
These directions are for cooking this recipe to serve immediately and NOT to freeze for later.
- In a bowl, mix all ingredients except pork and frozen mango.
- Place pork in slow cooker.
- Add sauce to slow cooker then add frozen mango.
- Cook on HIGH for 4-6 hours or LOW 7-9 hours.

Hi Jessica, If you add this to a menu as a member, our resources automatically double everything so you make the recipe twice. If you are just following the recipe from the recipe page without adjusting your serving size or adding it to a menu, this recipe will make the dish 1 time for 4 servings.
I didn’t have any apple juice, but had apple jelly on hand. Turned out delicious!

Why can’t you add frozen mango into freezer bag?
Hi Emily! You absolutely can add the mango to the bag! Since the mango is purchased frozen some don’t like to remove from the original packaging to then place in another package. It’s all in how you like it best! 🙂
