Slow Cooker Mango Pork - Ready to Eat Dinner

<p>I got some inspiration from the Once A Month Mom & DOLE Frozen Fruit Menu contest entries. This recipe was an inspiration of looking at several different recipes to come up with one that worked for us. You could also substitute chicken if you aren't a fan of pork.</p>

Ingredients

  • 2 tablespoons Brown Sugar
  • 1 teaspoon Italian Seasoning
  • 1/2 teaspoons Kosher Salt
  • 1/2 teaspoons Black Pepper
  • 3 tablespoons Cornstarch
  • 2 tablespoons Soy Sauce
  • 1/2 cups Apple Juice
  • 1 1/2 pounds Pork Tenderloin
  • 3 1/3 cups Mango, Frozen

  1. In a bowl, mix all ingredients except pork and frozen mango.
  2. Place pork in slow cooker.
  3. Add sauce to slow cooker then add frozen mango.
  4. Cook on HIGH for 4-6 hours or LOW 7-9 hours.

Why would I want to freeze this?

  1. In a bowl, mix all ingredients except pork and frozen mango.
  2. Place pork in slow cooker.
  3. Add sauce to slow cooker then add frozen mango.
  4. Cook on HIGH for 4-6 hours or LOW 7-9 hours.
  5. Let cool.
  6. Divide among indicated number of bags. Seal, label and freeze.
