Spicy Pork Loin with Pineapple Upside Down Jam - Dump and Go Dinner

Ingredients

  • 1 tablespoon Minced Onion, Dried
  • 2 tablespoons Brown Sugar
  • 2 teaspoons Chili Powder
  • 1/4 teaspoons Cayenne Pepper
  • 1/2 teaspoons Garlic Powder
  • 1/2 teaspoons Cumin
  • 1/2 teaspoons Black Pepper
  • 1/4 teaspoons Salt
  • 2 tablespoons Vegetable Oil
  • 1 1/2 pounds Pork Tenderloin
  • 3/4 cups Pineapple Upside Down Jam

  1. Combine minced onion, brown sugar, chili powder, cayenne pepper, garlic powder, cumin, black pepper, salt and vegetable oil in a bowl and stir to mix well.
  2. Using hands, rub pork loin with spice mixture, covering the outside well.
  3. Cover and place in refrigerator to marinate for at least an hour.
  4. Grill pork over medium low heat for 45 minutes to an hour, until pork reaches 150F.
  5. Remove from grill, cover with foil and allow to sit for 10 minutes.
  6. Slice pork and serve with jam on top.

Why would I want to freeze this?

  1. Combine minced onion, brown sugar, chili powder, cayenne pepper, garlic powder, cumin, black pepper, salt and vegetable oil in a bowl and stir to mix well.
  2. Using hands, rub pork loin with spice mixture, covering the outside well.
  3. Divide pork into indicated number of gallon freezer bags.
  4. Divide jam into indicated number of pint freezer bags.
  5. Place one jam bag in each gallon bag, label and freeze.

  1. Thaw: In fridge
  2. Grill pork over medium low heat for 45 minutes to an hour, until pork reaches 150F.
  3. Remove from grill, cover with foil and allow to sit for 10 minutes.
  4. Slice pork and serve with jam on top.
