Sundried Tomato Pasta Bake

This secret recipe club post is a combination of tomatoes, sundried tomatoes, cottage cheese and pasta.

Ingredients

  • 16 ounces Fusilli Pasta
  • 2 1/2 cups dice Onion
  • 3 tablespoons Butter
  • 3 cups Cottage Cheese
  • 1 1/2 teaspoons juice Lime
  • 1/8 teaspoons Salt
  • 1/8 teaspoons Black Pepper
  • 15 ounces Crushed Tomatoes, Canned
  • 1/4 cups Sun-Dried Tomatoes in Olive Oil
  • 1 teaspoon Chili Powder
  • 1 tablespoon Sugar
  • 1 cup Mozzarella Cheese, Shredded

Make It Now Cooking Directions

These directions are for cooking this recipe to serve immediately and NOT to freeze for later.

  1. Cook pasta al dente. Drain and set aside.
  2. Saute the chopped onions in butter.
  3. Add in the cottage cheese, lime juice, pepper and salt. Stir them until well combined and set this aside as well.
  4. Boil the tomato puree, sundried tomatoes, chili powder and sugar until a sauce of thick consistency is obtained.
  5. Grease indicated number of 8x8 pans.
  6. Spread sauce in bottom of pans. Layer half pasta next (1/4 in each pan). Then sprinkle some cheese followed by the cottage cheese mixture. Cover with remaining pasta, followed by sauce and finally the cheese.
  7. Bake at 350 for 30 minutes.
