  • 1/2 cups mince Onion, Yellow
  • 1/4 cups Coconut Milk, Canned
  • 1/2 cups chop Parsley, Fresh
  • 1/2 cups dice Celery
  • 1 1/4 pounds Ground Pork
  • 2 cups drain Spinach, Frozen
  • 1/4 cups Coconut Flour
  • 1 teaspoon mince Garlic, Cloves
  • 1 teaspoon Kosher Salt
  • 1 1/2 teaspoons Black Pepper
  • 1/4 teaspoons Nutmeg
  • 2 individual Egg
  • 5 individual Bacon

Why would I want to freeze this?

  1. Heat coconut oil in a skillet over medium heat.
  2. Saute mushrooms and onions until softened.
  3. In a blender, mix coconut milk, parsley, and celery until it forms a puree.
  4. In a mixing bowl, combine pork, spinach, coconut flour, garlic, salt, pepper, nutmeg, puree, eggs, onions and mushrooms.
  5. Mix well, using hands, if necessary.
  6. Divide mixture among indicated number of loaf pans and place bacon strips on top.
  7. Cover pans with foil, label & freeze.

  1. Thaw: In fridge
  2. Bake at 350 degrees for 70 minutes, turning halfway through.
  3. Turn oven to broil and crisp bacon for 3 minutes.
