<p>This recipe is a fun twist on a classic summertime favorite! Covered in a tasty dressing this Sweet Broccoli Pasta Salad is sure to delight! With farfalle pasta, broccoli, cauliflower, bacon, and onions will be great as a main dish or a side dish!</p>

Ingredients

  • 8 ounces Farfalle (Bowtie)
  • 1 cup dice Broccoli
  • 1 1/2 cups dice Cauliflower
  • 1 cup cook and dice Bacon
  • 3/4 cups dice Onion
  • 1/2 cups Mayonnaise
  • 1/2 cups Sugar
  • 1 tablespoon Apple Cider Vinegar

  1. Boil water for the pasta.
  2. When water is boiling, add pasta (take special note to set the timer for the pasta but set it for 3-4 minutes BEFORE the pasta is due to be done).
  3. A few minutes (3-4) before the pasta is done cooking add the broccoli and cauliflower to the pasta and water. Cook for 3-4 minutes.
  4. Drain pasta/broccoli/cauliflower and place in a large bowl.
  5. Add in bacon and onion.
  6. In separate bowl mix together mayonnaise, sugar, and cider vinegar.
  7. Pour over pasta salad and mix well.
  8. Chill for several hours and serve.

Why would I want to freeze this?

  7. Divide dressing among indicated number of pint freezer bags and seal.
  8. Divide pasta salad mixture into indicated number of gallon freezer bags and place sealed pint freezer bags of dressing inside of gallon bags and seal. Label and lay flat to freeze.
