  • 2 tablespoons Bacon Fat
  • 6 1/2 cups chop Mustard Greens, Fresh
  • 1 teaspoon kosher salt, #1

  • 1 tablespoon Ghee
  • 1/3 cups dice Onion, Red

  • 4 cups cook and dice Turkey, Whole
  • 1/3 cups cook and dice Bacon

Freeze For Later Cooking Directions

Why would I want to freeze this?

  1. In a large skillet, heat bacon fat over medium high heat.
  2. Add greens and saute until wilted. Add salt #1 and pepper #1, and stir in chicken stock.
  3. Reduce heat to medium-low, cover and cook until liquid has evaporated, about 10 minutes.
  4. Meanwhile, heat water in stockpot. Bring to a boil.
  5. Add sweet potatoes and boil for 3 minutes.
  6. Drain and rinse with cold water. Set aside.
  7. Once greens are done, remove from skillet. Add ghee to skillet.
  8. Add onion and sweet potato to skillet and season with salt #2 and pepper #2.
  9. Stir in turkey, mustard greens and bacon and cook, stirring occasionally until potatoes are tender and the hash is beginning to brown.
  10. Allow to cool.
  11. Place in freezer bag, label and freeze.
